Salted Chocolate Brownie Cookies | Cupcake Jemma

Hi, it’s me Gemma, and I’m here at the crumbs and doily shop in Soho And I’ve given you a few of my cookie recipes so far But this recipe is for the serious chocolate lovers out there. It is packed full of High quality dark chocolate It’s super rich and it isn’t like salted chocolate Brownie cookies Let’s go now my trick to a really nice chewy texture in this cookie is rye flour now Rye flour has less gluten than wheat flour So if you’re following a wheat free diet [or] you’re trying to lower your gluten intake then this is perfect quickie for you I have 120 grams of this and I’m going to add one teaspoon of baking powder and a quarter of a teaspoon of salt And I’m just going to whisk that together And pop it to one side and next I need to melt some chocolate together with some butter So I have my Saucepan here with a little bit of water and a heat proof Bowl with my chocolate and this is 395 Grams of Ginger [Lo] the chocolate its minimum 70% cocoa [solids] it’s really good quality and to that I’m going to add 50 grams of chopped unsalted butter And then over a low heat. I’m just going to melt those together until they’re all really well combined and completely liquid All right, my choppers lovely and melted. I’m just going to set that to one [side] to cool down a little bit Meanwhile I’m going to get my eggs on my sugar going, so I have four large free-range eggs here and Since that, I’m going to add 270 grams of Light soft Brown Sugar you can use Muscovado or dark brown sugar the more dark your sugar the more treacly your cookies would be but I really like lights off [ramp] Here we go And I’m going to whisk these together until they’ve tripled in volume which takes about five or six minutes And I’m going to do that on a medium speed So as you can see it’s gone really really pale and the volume has increased loads So now it’s time [to] put the chocolate in and I’m just going to very Very thoroughly spread all of this straight into the Bowl And just on a low-speed. I’m going to whisk that all together And once it’s already well combined. It’s time to the last bit which is the dry ingredients So the flour baking powder and salt, and I’m just going to add that and mix it really slowly that looks perfect, so As you can see it’s pretty sloppy [batter]. It looks a lot like a brownie which is Technically what it is so this isn’t going to be much fun for cooking cookies with so I need to put this into the fridge for 30 minutes to an hour just to firm [up] a little bit so I can scoop it Okay, my butters been in the fridge for about an hour, and it’s firmed up really nicely which means now it is time to scoop And now just using the palm of my hand. I’m just going to flatten these down and then Sprinkle them with salt Now I’m using this lovely mold and sea salt which is the stuff that has kind of natural Crystal shape It’s really really delicate and it’s really tasty and These need to be baked at 180 degrees C for 8 to 10 minutes until they’ve puffed up loads And there’s still a little bit soft inside Once they come out the oven they just need to cool down as these ones have and now it’s time to have a look inside my salted chocolate Brownie cookie look at that perfect Brownie consistencies still slightly soft in the middle and mmm, chewy and yummy Thanks for watching I hope [you] enjoyed this video if you have then don’t forget you can subscribe to my channel by clicking on the link I’m going to go now and see how many of these I can eat and until next week so well

    I had to calculate the receipe. And if you really got "only" 12 pcs of the whole receipe they are around 370kcal each with 30g of sugar.yikes …

  6. Omg, these cookies are impossible! The dough broke my scoop, and trying to work with them with a spoon and your hands is excruciatingly terrible. You end up just lifting off chunks of the dough to stick to your hands. They so far have taken about 20 minutes in the oven, not 8. I'm not a novice baker, but these have made me want to pull my hair out!

  8. Went to a lot of trouble to get rye flour. Followed recipe and tips to the letter. Wound up with a dough so sticky it was nearly impossible to get it on a cookie sheet and "cookies" that weren't moist in the middle – they were disgusting and gummy. Big thumbs down on this one.

Not sure if you have followed the same recipe you hv given to us below the video because I tried making these and it definitely didn't turn out like what u have showed in the video.. My cookies spread so much even after scooping just about a teaspoon and it went flat like a pancake! I bake a lot all the time I follow laura vitalie, scran line and so many other people on YouTube and when I follow their recipe it turns out to be just as what they show us. This is the second time I've followed your recipe and I'm never going to make the same mistake again! Wasted so much chocolates!! ๐Ÿ˜

  18. If flour is 100% then why sugar is 200% approx. Seems like it will make a candy not a cookie… and 600% approx. of grease (chocolate + butter) it does not seem to be correct … Sorry I do not want to sound rude (I am not a native English speaker), but will you be so kind to give us the correct meassurements? I do not want to criticize you, please help me.

  21. @cupcakejemma I made these and I must have done something wrong. They came out grainy and spread like crazy rather than puffing up. I'm thinking that the rye flour I used wasn't finely ground enough to get the right texture.

    At the same time, they were a little sweet to my taste. Do you think reducing the amount of sugar will change their texture dramatically?

    And if not, how much would you recommend reducing?

  25. This recipe is so good. I too couldnโ€™t get rye flour so used all purpose flour. I added espresso powder and more cacao powder to make it even richer chocolate flavor. I think I am going to keep making these cookies with bit less sugar next time. ๐Ÿ™ƒ

  28. I followed this recipe and it was a blast! I did not have rye flour so just used all purpose flour, added some whole chocolate and peanuts chips .. they look, taste and smell amazing … I baked half the quantity and put the rest in the freezer ..
