Hey guys, it’s Ro! Welcome to another Nerdy
Nummies! It’s the holidays! And, I got so many requests
to do something Resident Evil, and one of my favorite treats for the holidays
is chocolate peppermint bark. So today we are gonna make chocolate peppermint
cupcakes, and theme them to be like Resident Evil. Alright, let’s
get started! The first thing that we’re gonna do is we’re
gonna make our chocolate cupcakes. I’m gonna be using an instant Devil’s
Food Cake recipe, because I thought, Devil’s Food Cake… That is perfect for
Resident Evil! If you don’t have a box cake you can just use your favorite Devil’s Food
Cake recipe. And my sister has allergies to gluten, so just in case you were
wondering, they do sell box cakes that are gluten free. Uh, these recipes do
exist. Alright, let’s get started, you’re gonna add
your mix to the big mixing bowl. Ooop! Pfff-ha-ha-ha-ha! Don’t eat the plastic bag! Then you’re gonna add 3 eggs, 1-1/4 cup
of water and 1/2 a cup of vegetable oil. Now I’m just gonna take an electric hand
mixer and beat for about 2 minutes on a medium speed. Once your batter is all mixed together, everything
is all evenly combined. Now we are gonna fill our little cupcake trays,
I put these little paper linings in them, just a dark color. And, I love this,
this is just a tablespoon, and you’re gonna take 2 scoops and put them
in each tray. Scoop it out with your finger, it’s OK to
get messy. Once you got all your cupcake trays filled,
you’re just gonna heat your oven to 350 and bake for 18 minutes. And, while these
cupcakes are baking, we’re gonna be making some homemade, from scratch peppermint frosting,
and, Umbrella Corp decorations! I took the logo, I found this image online,
and then I just put it in word, printed it out on a piece of paper. Then you’re
just gonna lay it flat, take a piece of scotch tape, I’m putting 1 on the top,
1 on the bottom, so that it won’t move. And then you’re just gonna take a piece
of wax paper, put it on top, and again put a piece of scotch tape on the
top and bottom. We’re gonna start with the red frosting,
and then once the red frosting has dried after 10 minutes, then we’re gonna do
the white. So just take your red frosting and frost all
the little red triangles. Once you got all your little logos done, you’re
just gonna set these aside for about an hour, so that they’ll set.
You can even leave them overnight if you’d like, but just any dry place, that’s
where you want to put these. Not in the refrigerator, just somewhere dry. Now we are going to make some yummy, made
from scratch, cream cheese peppermint frosting. Yum-yum-yum-yum! The first things that we’re gonna do to make our
cream cheese peppermint frosting is we are gonna smash a bunch of peppermint
candy, you can use those circle, little peppermints, or, if you have any candy
canes, I had these lying around the house. So, I’m gonna be smashing up a bunch
of candy canes. You’re just gonna put them in a ziplock
bag, remember to unwrap them, take off all the plastic before you put them in the little
bag. Then I’m gonna close the bag and hammer
‘em! Ohhhhh! Smells so good! So much peppermint! Now we are gonna cream our butter and cream
cheese, You’re gonna take, this is softened butter, I just let it sit
out so that it’s room temperature. It’s 6 tablespoons of butter, then 6 ounces
of cream cheese. Then you’re just gonna, mix it up, cream
it together until everythings combined. Once your butter and cream cheese are all
combined, you’re going to take 3-1/2 cups of powdered sugar and you’re
just goinna slowly add it to the mixture. Once you’ve mixed in all the powdered sugar,
now we’re just gonna add 1/2 a teaspoon of peppermint extract and 1/2 a teaspoon
of vanilla extract. Then you’re gonna mix together again until everything
is nice and sch-mooth! Look at that! Our frosting is nice and smooth
it smells so good, like fresh peppermint! Now we have everything, let’s
put it all together! The first thing I’m gonna do, is, take these little
red liners and I’m gonna put them underneath every single cupcake, so we’ll
have Resident Evil colors! I scooped all of our peppermint frosting into
this big plastic bag, and I put a round tip at the end. I put a little tape
so that our frosting would stay in there. This is a number 807 tip, so a little bit
round-er. I think it’s about 1/2 an inch. And now we’re just gonna frost the top of
every cupcake. Start on the outside, work your way in, reeeewwww!
Around, around, around! And boop! Now we’re gonna take all the candy cane
that we crushed up, and just sprinkle a little bit over the top, that’s why I’ve
put the cupcakes on a cookie sheet, so it will catch all the extra. I make it rain, make it rain! Make it rain, make it rain! Now for the final touch, what we’re gonna
do is take our little cookie icing logos, our Umbrella Corp. logos, and I’m just taking a knife
at the end of the table. These are a little bit delicate, so just be
careful. And I’m just gonna put it right on top. Ta-da! Here are our Resident Evil Chocolate Peppermint
Cupcakes. They are so good, thanks you guys for suggesting
something Resident Evil, I’ve been meaning to do something, and this
was the perfect time to do it! Because of the colors red and white and the
peppermint and the holidays, it was just so perfect! Alright, if you guys have any other suggestions
