Pillsbury™ Whoopie Pies


Whoopie pies are a classic American
treat and making them at home just got a lot easier. Pillsbury’s mini whoopie pie
recipe is not only easy, it’s delicious. First heat the oven to 350 degrees
Fahrenheit, then line cookie sheets with parchment paper, in a medium bowl combine
one box of Pillsbury sugar free devil’s food cake mix, three large eggs, 3/4 of a
cup of water and 1/2 a cup of Crisco pure vegetable oil. Beat with an electric
mixer at a medium speed for two minutes, scraping the bowl occasionally. Using a
medium scoop, that’s about 2 tablespoons, spread the batter into two and a quarter
inch diameter circles. Make sure to keep two inches between each one. Bake them
for seven to nine minutes or until the center is set. Cool for one minute on the
cookie sheet, then allow them to cool completely on a cooling rack. Now using
your electric mixer, beat one eight ounce package of softened cream cheese on
medium speed until it’s light and fluffy. Then add one 15 ounce container of
Pillsbury sugar-free vanilla frosting until well blended. Turn half the pies
flat side up and spread two tablespoons of filling in the center. Next top with
the remaining pies, rounded side up. Press gently to spread the filling. Chill until
ready to serve. These delicious Pillsbury mini whoopie pies won’t last long, so be
sure to make extra!
