A外皮 a.油皮麵皮部份 20g/個 中筋麵粉65g,糖粉8g,無鹽奶油25g,冷水35cc b.油酥麵皮部份 15/個 低筋麵粉58g無糖可可粉2g 無鹽奶油30g, B. 奶油芋頭內餡 40g/個 材料: 芋頭200g,黃砂糖35g,無鹽奶油15g,全脂奶粉10g 一製作油皮麵糰 a.油皮麵皮部份 20g/個 (01) 中筋麵粉65g,糖粉8g,無鹽奶油25g,冷水35cc 糖粉過篩 加入過篩的中筋麵粉 無鹽奶油切小塊回溫 加入無鹽奶油及冷水混合均勻 移至桌面搓揉5-6分鐘成為一個均勻柔軟的麵糰 密封醒置30-40分鐘 二.製作油酥麵糰 b.油酥麵皮部份 15/個 低筋麵粉58g無糖可可粉2g 無鹽奶油30g, 低筋麵粉+無糖可可粉用濾網過篩 加入無鹽奶油混合成糰 密封備用 油酥麵皮平均分割成3個(每個40g) 小麵團滾成圓形 油皮麵皮平均分割成3個(每個50g) 光滑面翻折出來滾成圓形 油皮麵皮拉開光滑面朝下 包入一個油酥麵糰收口捏緊滾圓 覆蓋保濕麵團休息15分鐘 事先完成的奶油芋頭餡平均分成6等份滾圓 […]
