400g all purpose flour 50g unsalted butter 1 teaspoon salt 200ml cold water *knead for 4-5 minutes *refrigerate for 30 minutes 200g unsalted butter *18×18 cm, refrigerate for at least 20 minutes *roll in a square, approx. 36×36 cm (double the size of butter) *encase the butter in the dough *roll up to 50cm in length *fold and repeat the process one more time *refrigerate for 20 minutes *roll and fold for two more times *refrigerate for 20 minutes *roll and fold for two more times (last time when need to refrigerate) *refrigerate for 20 minutes *roll up to 50cm in length *cut the edges *fold for the last time *roll again if you want to use it straight away or refrigerate for up to 3 days, freeze for up to 3 months
