Healthy Banana Cake | Banana Bread (Less Sugar and Butter) [Nyonya Cooking]


Hi guys, welcome to Nyonya Cooking! Today, we are doing something different We’re going to bake So, this is the recipe of banana cake or also known as banana bread This really reminds me of my childhood back in Malaysia Besides having my mom baking it, I will also get it from the street or night market occasionally I would usually have it for lunch in school the next day This is what my mom had done The ingredients had been adjusted The banana cakes that are sold tend to be too buttery and oily Totally not to our liking and tends to be too sweet So, I hope you would love this recipe Let’s hop on to look at the ingredients Back in Malaysia, I used to opt for self raising flour Over here, I usually work with plain wheat flour If you want to make your own self raising flour, you need a combination of wheat flour, baking powder and also salt This is my version of self raising flour Let’s move on to sugar, butter, eggs and bananas Make sure to choose ripe bananas To know if it is really ripe, look at the skin of the banana You can tell from the dark spots on the skin The more spots there are on the skin means the higher the sugar content in the banana This is the kind of banana you need to use Since the bananas are already sweet, lessen the usage of sugar This is to control the sweetness of the cake Let’s move on to mixing the ingredients Peel the bananas and cut them into smaller pieces Mashed them up with a fork This is the consistency we are looking for Mash the bananas until there are no longer chunky to create a smooth paste to make the cake So, this is done The next step will be to mix the butter and sugar together This is butter at room temperature If it is just taken out from the refrigerator, it tends to be really hard and would be difficult to work with Using a cake mixer, mix the butter and sugar together When it is evenly mixed, add the eggs Continue mixing Then, add the flour and the baking powder Sieve the flour and baking powder into the mixture Mix it Add in the mashed bananas This cake will be boosted with lots of banana goodness Once all the ingredients are added, the only thing to do is to mix them thoroughly Then, pour it into a cake pan Continue mixing It’s done You may use an aluminium cake pan What I am using here is a silicon pan Before pouring in the batter, Grease the pan with a bit of butter to prevent the cake from sticking to the pan This would make the sides of the cake crispy which I really love This would also help when removing the cake as it would not stick The batter was poured into the middle of the pan, therefore, it looked uneven Do not worry During the baking process, the batter would spread out evenly Just give it a few thumps on the work area to level the batter The oven had been preheated at 170 degrees Celsius This is the temperature needed to bake the cake Put in the cake mixture into the oven very carefully To check if the cake is fully baked, poke a knife or a wooden chopstick into the cake If it comes out clean, it means the cake is ready Remove the cake from the oven This smells amazing It smells so strongly of bananas I love bananas Remove the cake carefully from the silicon pan It comes off very easily I’m going to cut off a small piece When it comes to cakes, I like the sides to be slightly crusty, a little bit firm and soft on the inside Gorgeous, right? So, I can’t wait to try this As you may have guessed, my favourite part of the cake is of course, the sides which are crusty that I have been telling you about Take a look here It is not hard at the sides but it has this slightly browned taste to it I really love it Without further ado, I’m going to try it now Hmmm…..   5. Some how I ended up baking this for 2 hours. the fist hour it was still battery. the second hour I turned up the heat which kinda helped

  10. it was my first time baking a cake, everything came out perfect but I would have loved if you would have mentioned to leave it to cool out before flipping the cake out straight from the oven, it all felt apart..

  11. Less fat is not healthy. We need fat in our diets to avoid atrophy of the brain! Fat does NOT cause heart attacks or Strokes! sugar does.

  20. My dear Nyonya, I made your banana cake recipe many times. My husband whom doesnโ€™t eat banana but like it very much.
    I have a suggestion for you to try. Using sifted brown sugar 75g. instead of white sugar. 90g. You will get light sweetness and better for health. Because we would get sweetness from very ripened bananas especially who bake in Asia. Since Asian banana taste sweeter European/USAโ€™s.

  21. I tried this and it turned out nice except a little too sweet despite I had already cut down on sugar your recipe called for. May be it was due to the overripe bananas are already very sweet. I will try to add more banana next time and even lesser sugar.
