Gluten Free Cupcake Recipe | Mint Chocolate Chip


Today on the Momma Lyles Cooking Show, we’re
doing some mint chocolate chip cupcakes and guess what?? They are gluten free! Yup! Gluten free. You won’t miss that gluten at all. Why am I making gluten free, you wonder? Because I have a friend and she can’t have
gluten. She’s celiac. It’s her 50th birthday. Love you Kelly! Mean it. Today, we’re doing cupcakes for her birthday. Y’all lets get started. Ingredients Today. We have, namaste gluten free flour, granulated
or white sugar, vegetable oil, four eggs, 1 1/4 cups buttermilk. 1/2 cup butter. You’re going to do baking powder, baking soda,
salt, vanilla, chocolate chips, and peppermint oil. One thing that you want to make sure is that
your butter, eggs, and your buttermilk are all at room temperature. First thing you’re going to do is in one separate
bowl (medium to small) you’re going to put in your flour. You need three cups or in my case 414 grams. I like to weigh it. Baking is an exact science. 1 tbsp baking powder and a half tsp of salt. Whisk those together and set it to the side. Now you’re going to go to your mixing bowl. You’re going to cream together half a cup
of butter. 1 1/2 cups of sugar. 1/2 cup of vegetable oil. Once that is very creamy then you’re going
to add 4 eggs. Add one at a time. You’ll drop one in then mix. Until you get all four incorporated. Then you’re going to add 1 tbsp of vanilla. And a dash of peppermint oil. Mix that together and then set your mixer
to low. Alternating between your flour mixture and
your buttermilk you’re going to put a third of the flour and a third of your buttermilk
and then mix in between each addition until you’ve incorporated both components completely
together. Then you’re going to add your chocolate chips
and mix just enough just like a couple of seconds to make sure they are fully incorporated
and then we’re going to put them in your cupcake pans. Then you’re going to put your cupcakes in
the oven 350 degrees. About 20-25 minutes. Or until a toothpick comes clean. These are delicious! Gluten free and all. I hope you enjoy these gluten free mint chocolate
