Today I will be making carrot burfi. Gajar ki burfi or you may call this carrot fudge. This is a classic Indian dessert. Beautiful orange carrot color. Carrot burfi is packed with all the goodness of carrots. This absolutely tastes divine. Carrot burfi is also perfect for special occasions. This recipe will serve 4. To make carrot burfi we will need: 2 cups of shredded carrots make sure before shredding you peel them I have used the food processor to shred the carrots. 2 cups of milk 1/3 cup of cream 1/2 cup of sugar 2 tablespoons of unsalted butter or ghee 1/4 teaspoon of crushed cardamon 2 tablespoons of crushed cashew for garnishing. I am ready to make gajar burfi. Carrots Milk Cream Mix it and bring it to boil over medium high heat. Milk and carrot has come to boil it has a beautiful color. Lower the heat to medium and let this cook for about 15 minutes and stir occasionally and do clean up the sides. Mix is looking very good as you see most of the milk has evaporated. And I did stir it in between few times and I always clean the sides. So as milk is reducing it will start building on the side and will get burnt if you don’t clean the sides. So now we have to cook about 10 more minutes and on that we do have to stir more often and till this becomes very lumpy or soft dough. Mix for carrot burfi is looking good. All the milk has evaporated and it’s kind of a soft dough. So after milk has come to boil it has taken me 23 minutes. Now this is the time to add the sugar. Mix it. And now sugar will leave. Make it more moist. So we will have to stir fry about 4-5 more minutes. So this has been about 4 minutes. And as you see burfi is coming together. And it’s time to add the butter. And cardamom powder. Mix it well. And now we have to cook for another 2 minutes. But keep stirring. This has been about 4 minutes. As you see burfi has started coming together and color is really natural and looking very good. Time to transfer it into the plate. And just press it firmly in the square. It should be about half inch thick. So I am going to cut them in square but I am not going to lift them because otherwise it won’t be firm. So I will wait just for about 2 hours. And then just put some cashews over. Put the cashews over and do press it. So it sits inside. Burfi is looking very nice. I will wait 2 more hours before the burfi will be ready to serve. Gajar burfi is looking great it taste delicious. It has very nice natural color of carrots. Nothing is better than home made sweets. Gajar burfi will be enjoyed by everyone.
