OK, so for Banana cake, what we have is 6 oz Butter. I use ‘Can’t believe its not butter’ It works wonderfully with this cake makes it light and keeps it moist its lovely. Now we have 9 oz sugar 12 oz Flour a heaped teaspoon of baking powder added to it we have 3 Bananas 3 eggs, and about 3 Tbsp milk in a large jug milk is going to be boiled in the microwave, 2 teaspoons of Bicarb added to it. when it froths up, will fill the jug OK….. Lets get baking !! First of all, we mash the Bananas so we prepare everything first Hang on to your Banana, you don’t want to lose it ;o)) the riper the banana the better makes life a little bit easier these Bananas have just turned *Bananary* A nice pure to set to one side ready to add to your mix ok, pop them to one side right, we’ll crack the eggs into a glass ready to use we can ensure that we don’t get any shell in there as well so we don’t put them straight into the cake mix and realise we have shell in there so there again, set them to one side
now we’ll take the boiling milk out of the microwave add 2 teaspoons of Bicarb of Soda So thats the bicarb of soda see how it fills the jug and that’s ready to use ok, into the bowl we add our Butter and our Sugar Im going to mix this using an electric hand held mixer its a small quantity so im not using the kenwood for this and it’s such a quick and easy cake and that’s basically, or not far off an ‘all in one’ cake so, i’ll just mix the butter and the sugar and then add everything else all we do now is add everything, all in one we add the bananas thats the 3 eggs this is your flour with baking powder added now your Bicarb that’s nicely frothed up pop all that in together now we can just gently mix it all together lovely, ready for baking sheet, or you could make 2 loaves this is going in an 8″ tin will make a cake about 1.5″ deep square baked on 150 degrees ok, there we go, it ready, in it’s tin and lined with parchment , that’s an 8″ tin and you can see how far up the side it has gone obviously will rise ! you’ll have a nice cake I’m baking this in the middle of my oven about 150 deg C the original recipe stated 180 Deg if I remember correctly my oven is quite a hot oven so over time and many times of making this cake i’ve brought it down a notch, brought it down a notch and now I don’t get the dome on the top it doesn’t catch around the edges and I have a nice flat cake Ok, so you need to experiment a little with your own oven round about 45 mins it is going to take to bake, OK!
