Baking & Pastry Arts Management Alumni Profile – George Brown College


DELNA PATEL: Even if I’ve
graduated I’m still gonna be a part of George Brown. [music] DELNA PATEL: As a kid I would
go and steal chocolate from my mother’s cupboard for fun. I probably thought it was a
good idea to make it and eat it myself than to go and
steal it somewhere. I work at the Old
Fire Hall in Unionville. I basically do anything and
everything to do with chocolate. The good part about my job
is I get total free hand. I’m lucky enough to have
an employer who is like, “It sounds cool. Let’s go for it”. KIMBERLY LANDI: When I met
Delna, I could tell she had what we were looking for
as far as artistic flair, a friendly air about her. DELNA PATEL: Having a strong
foundation is most important in my field. You need to know your
theory to actually use it in your practical. You generally speak to customers
because it’s an open kitchen. People are watching you work. KIMBERLY LANDI: The ability to
know what your task is and me not having to follow-up. I don’t have to worry if I
have a George Brown student in my kitchen. CHRISTOPHE MEASSON: Delna was
very focused on creativity, the business aspect and
certainly this is two things the program contains. DELNA PATEL: The labs in George
Brown are just like wonderland. I remember the first day when I
entered when I saw the place, I was just awestruck. I’m really grateful for my
professors to have always been there for me whenever
I’ve needed them. I have made so many
connections through them. I went to France
for a whole semester. I cannot emphasize how amazing
this experience was for me. It made me realize
what I was capable of. It made me realize that,
“Okay, I can do this”. CHRISTOPHE MEASSON: Delna knew
what she wanted out of this program from day one. With a program like this, what
you put in is what you’ll get out of it. DELNA PATEL: I’m still
connected to George Brown. I love that I can still go back
and chefs haven’t forgotten me. It’s like going back home
after a long vacation; that feeling of
warmth that you have. It’s just different. [music]
